Alongside varieties protected by PDO and Controlled Quality seals—such as Queso Nata de Cantabria, Quesucos de Liébana, and Picón Bejes-Tresviso—there is also an extensive selection of artisanal cheeses made from cow’s, sheep’s, or goat’s milk. These include fresh, aged, smoked, pressed-curd, and blue cheeses, each with its own distinctive character that enriches the region’s cheese identity.
