En 1917 comienza la historia de La Pasiega de Peña Pelada en manos de la Pasiega Brígida Ruiz que bajó de las laderas de Peña Pelada a Rubalcaba (Liérganes) para vender los quesos que ella misma elaboraba. El sabor de esos quesos ha perdurado en la historia. Hoy somos sus bisnietos quienes continuamos la labor en una moderna fábrica en La Cavada donde se elaboran los quesos con las mismas recetas con que elaboraba Brígida. Además de elaborar otros nuevos productos bajo la máxima de aunar tradición e innovación.
