Siete Villas Artisan Cheese Factory is a project driven by Judith and Iván. A few years ago, we decided to leave the city and embark on a different path, more challenging but full of surprises and joys. After working for large companies, we decided to open a small cheese factory where we could develop traditional recipes using modern techniques, thus offering a more contemporary approach. Currently, we produce goat cheeses, prioritizing animal welfare and supporting local producers.

A white cheese with a slightly ivory-colored, elastic paste. Its natural, glossy, wood-colored rind retains the characteristic smoky aroma obtained through traditional smoking with wood chips. It has a mild and balanced flavor with toasted notes of wood and cocoa.

Made with raw milk from Murcian goats. Matured with Penicillium camemberti, with a semi-hard texture and animal and fungal nuances. Slightly spicy aftertaste due to the pre-gastric lipase present in the rennet. Natural, edible rind, without the use of preservatives or mold inhibitors.
