This cheese is made with goat’s milk from our local supplier, Samuel Rodriguez, whose farm is located in Novales, Cantabria. There, the goats are cared for and pampered with the utmost respect and affection, and fed naturally, ensuring the highest quality milk. The milk is slowly pasteurized to preserve all its properties and maintain the cheese’s full flavor. El Bardal Goat Cheese is a pressed cheese, curdled with animal rennet. Each cheese is produced entirely by hand, with the artisan personally overseeing every stage of its production.
